てーさんちのプレハブ小屋

豆乳鍋は一度だけやった事があります。紀文の豆乳を買って来て、そこに書いてあった
レシピの通りに作ったら紀文の練り製品ばっかり使いました。なんかまんまと策略に
乗ったという感じ。まぁうまかったですけど、コストは結構かかるかな？豆乳も高い
ですものね。

作り方は間違っていないと思います。
やはり，あまり沸騰させるとたんぱく質が固まって「おぼろ豆腐」状態になるので，沸騰させない程度にしておけばよいのではないかと思います。

以前店で豆乳鍋食べましたが，最初から豆乳が入った状態から熱しましたヨ。

豆乳鍋の中に生肉をいれるからいけないのかな？(^^;
練り製品とかだと確かに沸騰しないでじわっと暖めてもよさげですよねぇ。

豆腐つくろうと思うと固まらないんですけどねぇ。。

豆乳鍋はあのおぼろ状のモロモロといっしょに食べるのが良いのです。

なので肉はアクの出にくい良い豚肉をお勧めします。

で、もこもこした食感以上にもったりした味わいになりがちなので、ダシは薄味、付け汁にゆずでもかぼすでもちょっと良いポン酢できれば生をしぼるのをさらに強くお薦め。

ゆず胡椒もしくは寒ずりも是非☆
